I love macaroons! Not only is coconut great tasting but it is good for you. There is a lot of information “out there” concerning the health benefits of good fats, medium-chain triglycerides (MCT) and lauric acid. Coconut contains all of these. Alrighty, here’s the recipe. Nice and easy!
4 egg whites (I always bring my egg whites to room temp. before I whip them up)
1/2 cup honey
1 tsp. vanilla extract
3 cups unsweetened coconut ( I buy mine at Sprouts or Whole Foods in the “bulk area”)
1/4 tsp. salt
Preheat oven to 350. In a mixing bowl, blend all the ingredients thoroughly. Cover your cookie sheet with parchment paper in order to prevent sticking. Put spoonfuls of batter several inches apart onto the cookie sheet. Bake for approx. 10 -15 mins. or until lightly browned. Let cool on the pan about 5 mins. Makes about 20 cookies.
FYI – I found that you need to use all honey as your sweetener in these macaroons. I tried using 1/4 c. granulated sweetener and 1/4 c. honey. The macaroons didn’t want to hold together because they needed the “stickiness” of the honey.
I love big flaked coconut (as pictured above) but I think that the smaller pieced coconut will hold together better.
Lastly, I added some sugar-free chocolate chips to some of the cookies. It’s a great addition if you like chocolate.
