This is a great tasting and good for you snack! If you are eating “processed” sugar-free, then these will help satisfy a sweet craving. Just be careful that you don’t eat them all in one setting!!

3/4 c almonds
1/4 c cashews
1 1/2 cups pitted Medjool dates
zest of 3 limes
juice of 3 limes
pinch of salt
1/3 c unsweetened coconut flakes
If you are accustomed to using dates in recipes then you know that the Medjool dates are the softest and easiest to blend up. (You can always soak your dates in water until they are soft. Pour off the water and use as directed in your recipes.)
Place the almonds and cashews into a blender or food processor and pulse to finely chop. Add the dates, salt, lime zest and juice. Blend until the mixture begins to clump together. The time needed to accomplish this will vary depending on the power of your blender. You will probably need to stop the blender and scrape down the sides. Be patient.
Transfer mixture to a bowl and scrape the blender one final time in order to get all the good stuff dislodged. Use your hands to form small balls. Roll each ball in the coconut flakes to coat. Store in airtight container in the refrige for up to a week. (They won’t last that long because they are so good!)
