Grain Free Granola

I love this granola!  It’s my very favorite!

If you don’t eat “grain free” then substitute some oatmeal for some of the nuts.  This recipe is very forgiving and you can use any combo of nuts, seeds or dried fruit.  I just use whatever I have on hand.

1 3/4 cup chopped nuts    (Cashews, almonds, walnuts, pecans)
1/2 cup seeds (Shelled pumpkin or sunflower seeds, hemp seeds)
1/2 cup unsweetened coconut flakes
1/4 cup coconut oil  (I use a little bit less because I have found that too much oil can make the granola too messy to eat out of your hand)
1/4 cup honey or 100% maple syrup  (can use some of each)
1 tsp. Vanilla

1 cup chopped dried fruit  (Cranberries, raisins, dried apples, apricots)
1 tsp. Salt

Preheat oven to 300.  Line baking pan with parchment paper.  In a glass bowl melt coconut oil, vanilla and honey or maple syrup.  Pour over your combination of nuts, seeds and coconut flakes.   Stir until coated.

Spread on baking sheet and bake until light golden brown.  Stir once during baking time.   This will take about 20 minutes.  Watch during the last several minutes so you don’t get the mixture too browned.  Remove from the oven and stir in the salt and dried fruit.  Press and flatten mixture down into pan.  Cool about 15 min and then break into pieces.   Store in a air tight container.

Great snack or as a replacement for cereal.   You can add a couple of spoonfuls to an unsweetened cereal in order to make it sweet without adding white sugar.
